Who says real men don’t eat quiche?
Try this tasty variation on the classic quiche by substituting hash brown potatoes for pie crust. Cooked, crumbled bacon or country sausage can be substituted for ham. This is a winner in our household.

Serve with toast and fresh fruit for a special brunch, or crusty French bread and a tossed green salad for a light supper.

Ingredients:

4 cups shredded hash brown potatoes, thawed and squeezed to remove excess water
2 tablespoons butter, softened
1 cup diced cooked ham
½ cup chopped onion
1 ½ cup grated Cheddar cheese, divided
4 eggs
½ cup half and half
1 4 oz. Can diced green chiles
Salt and pepper to taste

Directions:

  1. Preheat oven to 425 degrees.
  2. Mix hash browns and butter together, press mixture onto the bottom and sides of a lightly-buttered, 9-inch deep-dish pie pan. Bake in preheated oven for 20 minutes, or until crust is beginning to brown.
  3. In a small bowl, combine ham, onion and 1 cup of grated cheese. In a separate bowl, whisk together the eggs, half-and-half, green chiles, and salt and pepper. When crust is ready, spread the ham mixture on the bottom, and then pour the egg mixture on top.
  4. Reduce oven temperature to 350 degrees and bake 35-40 minutes or until filling is puffed and golden brown. Sprinkle with ½ cup reserved cheese, and bake an additional 5 minutes.

What’s for dinner tonight?

These are recipes for

Red Beans and Rice, and

Fried Shrimp with Lemon Sauce.

The beans and rice rival any restaurant, and the shrimp are crispy, yet delicate.

Red Beans and Rice

2 (15 ounce) cans red beans with liquid

1 (15 ounce) can red beans, drained

2 smoked ham hocks

5 1/4 cups water, divided

2 cups uncooked rice

1/4 cup minced onion

1 tablespoon minced garlic

1/4 teaspoon ground red pepper

1/2 teaspoon salt, or to taste

1/4 teaspoon freshly ground black pepper

5 tablespoons cold bacon grease or lard (better with bacon grease)

  1. In a 2 quart saucepan combine 1 drained can of beans, 1 undrained can of beans, ham hocks, onion, garlic and remaining 1 1/4 cups water. Simmer on medium heat for 1 hour or until the meat starts to come away from the bone. Remove from heat, cool and remove the meat from the bones.
  2. Bring 4 cups of water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  3. In a food processor or blender combine meat, beans and the liquid in which they cooked. To the mixture add red pepper, salt, black pepper and bacon grease. Process approximately 4 seconds or until beans are chopped and the liquid thick.
  4. To the food processor add the third can of drained beans. Process for 1 or 2 seconds so that most of the beans remain almost whole. Pour mixture back into the saucepan and cook on low, stirring often, until heated through.
  5. Serve over the steamed rice.

Fried Shrimp

1 pound jumbo raw shrimp

1 egg, slightly beaten

1 tablespoon cornstarch

1 teaspoon dry white wine

1/2 teaspoon soy sauce

1/4 teaspoon salt

Peanut oil for frying

1/2 cup flour

1/2 cup water

3 tablespoons cornstarch

1 tablespoon canola oil

1/2 teaspoon baking soda

1/2 teaspoon salt

  1. Remove shells from shrimp, leaving tails intact. Make a shallow cut lengthwise down the back of each shrimp; wash out sand vein. Slit shrimp lengthwise down the back almost in half (butterfly). Mix egg, 1 tablespoon cornstarch, the wine, soy sauce and 1/4 teaspoon salt in glass or plastic bowl; stir in shrimp. Cover and refrigerate 20 minutes.
  2. Heat peanut oil in a deep fryer to 375 degrees. Mix flour, water, 3 tablespoons cornstarch, 1 tablespoon canola oil, the baking soda and 1/2 teaspoon salt in a medium bowl. Stir shrimp into batter until well coated.
  3. Fry 5 or 6 shrimp at a time until golden brown about 3 minutes. Drain on paper towels. Serve with Lemon Sauce.

Lemon Sauce

1/4 cup chicken broth

2 tablespoons fresh lemon juice

2 tablespoons honey

1 tablespoon canola oil

2 teaspoons catsup

1/4 teaspoon garlic salt

1 teaspoon cornstarch

1 teaspoon cold water

  1. Heat chicken broth, lemon juice, honey, vinegar, canola oil, catsup and garlic salt to boiling in a one quart saucepan.
  2. Mix cornstarch and water; stir into broth mixture. Heat to boiling, stirring constantly. Cover and refrigerate. Serve with fried shrimp.

As usual, Mr. Ray Bryant did an excellent job facilitating the meeting last night. The official minutes are in development and will be approved by the Board. They will be uploaded to the site once approved. Here is a short recap:

Shane Arabie, a local HOA president and Kyle Planning and Zoning member spoke at our HOA General Meeting last night. Mr. Arabie has volunteered to visit Amberwood and address any questions you may have about plans for our area. Mr. Mike Rubsam and Mrs. Viki Rubsam have generously decided to host this meeting in their home. The meeting will be this Friday (7/20/07) at 6PM. Any questions you have about shared responsibility of drainage ditches that border our community on the North and East edges will be discussed. Amberwood residents are welcome to join Mr. Arabie and the Rubsams. Come see how the City of Kyle and the Planning and Zoning Commission interpret the regulations associated with fringe property and drainage in soon-to-be developed areas.

It is official. The Board Liaison position held by Mr. Ray Bryant was eliminated this week. Mr. Bryant held this position almost a full year. He, along with his wife Sandra, deserve much credit for working hard to facilitate many functions in the community.
If you recall, the Board Liaison position was created during the 2006 Annual Board Meeting. The purpose of the position was two-fold.
(1.) It was considered to be “a director in training” opportunity for one individual to “learn the business of the Association.” This would indirectly help Amberwood prepare to accept ownership of the HOA once Gehan transferred it to us.
(2.) This individual was the designated voice for our neighborhood. He was the only one authorized to speak directly to the Board as a representative of the entire neighborhood.

Dear Amberwood Community:

Mr. Ray Bryant has been the Homeowner’s Association Board Liaison since October 2006. The Board of Directors have had monthly meetings until March 2007 to help train and educate the Board Liaison on HOA Business. At this time the Board of Directors feel that Mr. Bryant, if either elected to have a position on the HOA Board or not, will be a good resource for the Amberwood Community.

The Board of Director’s have elected to eliminate the Board Liaison position at this time. We would like to thank Mr. Ray Bryant for all his time, dedication, and services that he has provided for the Amberwood Homeowner’s Association.

All Committee’s will need to direct any questions and/or concerns through RealManage, the Management Company. Also, all news articles will need to be sent directly to the Management Company for Board review and approval. The various Committee’s are encouraged to have their monthly gatherings, but Mr. Bryant is not allowed to hold the Monthly HOA Meetings representing the Homeowner’s Association.

There are some obvious questions that may cross your mind: “Is this a good or bad thing for the community?” “What does all this mean?” Well, it depends on who you ask. Some people see this as just par for the course. Feedback from previous Gehan/Lennar Boards has been non-existent. These people will argue that developer interests are obviously not aligned with those of home owners. Bottom line, they believe the builder just cares about selling homes and not much else. They will cite two sentences in this letter as proof of the Board’s disconnect with the community:

I really see nothing wrong with the first sentence. I completely understand the reasoning behind it. RealManage was hired to take care of the ‘day-to-day’ operations, so it isn’t a stretch to make them work for their monthly fee, right? Nothing wrong here.

However, the second sentence may present a legitimate issue. Before elimination of the Board Liaison position, we had a direct connection to the Board. Ray attended the meetings on his own time and expressed our collective issues to the Board. Those issues were usually gathered during our monthly General Meetings. Now all that is gone. From this point on we must individually present our concerns to RealManage, who will in turn present them to the Board, who will in turn think about their response and eventually give that response to RealManage, who will in turn respond to us (gotta love the efficiency here people).

Now outside of individual concerns, it seems like Committee Chairs will be the new “official” representatives. They will be able to present RealManage with collective issues formulated in their groups. This is a big change for us because each Committee conducts meetings at different times of the month for specific purposes. They were not designed to represent the general pulse of the community. In fact, they have wide variations in membership. (Website Committee–still dinner reservation for one!) When our Committee Chairs present their issues to RealManage, can we honestly say they represent the “whole” community?

On its face, this seems like a questionable move by the Board. But, if you look at the big picture this may not be a bad thing. It simply shows we are getting closer to taking over our Board–finally. Now who doesn’t want that? We’ve clamored for this change over a full year. Maybe a better outcome would be “Mr. Ray Bryant–Board Member” versus “Mr. Ray Bryant–Board Liaison”. Two sentences in the letter reference the current Board’s imminent departure:

The Board of Directors have had monthly meetings until March 2007 to help train and educate the Board Liaison on HOA Business. At this time the Board of Directors feel that Mr. Bryant, if either elected to have a position on the HOA Board or not, will be a good resource for the Amberwood Community.

To me, this sounds like they’re already gone. The only things that could happen in the short-term are: (a.) for the Gehan-run Board to notify RealManage of HOA transfer to Amberwood homeowners, (b.) notification from RealManage about this transfer along with date/time of the initial resident HOA Board election, and (c.) Board election. The important thing to remember is this: don’t blink because this may all happen sooner than you think.

Remember, our neighborhood meeting is scheduled for tomorrow evening at 6:30 P.M. As usual, the meeting will be held at Chapa Middle School. There will not be a guest speaker this month, but we will be discussing a VERY important issue: preparation for Amberwood residents to assume responsibility of the HOA and its Board. We will be taking over the Board from Gehan in the near future. Come and express your opinion about the path our neighborhood should follow once we take over the HOA.

Also, chips and dips will be served. There will be a door prize at the end of the meeting.

You may have noticed the site was down for a few minutes yesterday. We went offline for a small period of time to upgrade our server platform. I am happy to announce this site is now upgraded to PHP5 and MySQL5 through bluehost. All that means is we have more capabilities to provide users with better functionality in the future. About 250 - 300 local residents showed up last night to watch “The Polar Express” together at Gregg-Clarke Park. The kids had a great time, of course, and we enjoyed a much needed break. Here is a preview of our exprience:
